Blueberry Cream Cheese Croissant

Please forgive the photo- there are no almonds in this croissant! But this image is the closest thing to this product.

This croissant is shaped like a traditional butter croissant. It's filled with a lemony blueberry compote and a citrus cream cheese filling. It is topped with a dollop of citrus cream cheese and blueberries.

Croissant dough has both sourdough levain (for more flavor & a longer shelf life), and instant yeast (for more consistent fermentation & a milder flavor). It's made with stone ground yecora rojo, stone ground whole spelt, hard white whole wheat, and type 80 wheat flours. All organic Central Milling flour. Butter for lamination is French Beurre d'Isigny.
