Chausson aux Pommes w/ Cassis

An apple turnover à la français! The chausson aux pommes is a puff pastry dough encasing a chunky applesauce. We've used 3 apple varieties from Rainbow Orchards for maximum flavor and a variety of textures. The apples are cooked with French crème de cassis, a sweet French blackcurrant liqueur.

The puff pastry dough is made with type 80, soft white whole wheat, and hard white whole wheat flours. Laminated with French Beurre d'Isigny.
