Plum-Apricot Cheesecake Tartlet

This dessert is a cross between a cheesecake and a fruit tart. It's our whole wheat flaky pie crust, with a vanilla cheesecake base, a layer of a punchy lemon curd, then finished with a balanced plum-apricot jam.

A 4” tartlet meant for sharing...but we won't tell if you don't share.
