Vegetable Provençal Soup (1 qt)

This soup is inspired by a French Provençal Soup. We begin with our vegetable mineral broth flavored by seasonal produce (imagine sweet undertones of corn and English peas). Then we add cannellini beans from Iacopi Farms, corn, cabbage, tomatoes, carrots, onions, garlic, and green beans. 

For those who eat cheese, we recommend heating the soup then topping it with a scoop of our herbaceous pesto to add a little something extra.
